Bored Doe 2008
Madame Chevre, an udderley gorgeous doe, bored but mischievous, serenely looks out over her neatly manicured vineyards. She reluctantly conforms to legislation and tradition, and only utilizes Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc in her seductive blend. This she does vintage after vintage. Bored with tradition and legislation, she now uses her charm and seductive wines to add spice to her life. Beware, you are about to become her latest conquest!
IN THE VINEYARD
Cabernet Sauvignon is from two sites, one in Stellenbosch and one in Darling. Merlot is from a vineyard on the southern slopes of Paarl mountain. It is a trellised, irrigated vineyard and grows on decomposed granite soils. Petit Verdot and the Cabernet Franc is from trellised vineyards in Stellenbosch.
WINEMAKING
The individual components were hand-picked at optimal ripeness over a number of weeks in February and March, as the vineyards in the different areas ripened. The Cabernet Sauvignon, being a late ripening variety, was the last to arrive at the cellar. Grapes were destalked and lightly crushed and cold soaked for 48 hours. All components were fermented separately in stainless steel tanks using selected Bordeaux yeasts. After fermentation the wines were racked and malolactic fermentation took place in tank. Following this the components were sent to 225 litre barrels for 14 months. 10% of the Cabernet Sauvignon was matured in new barrels with the remainder of the wine components going to 3rd and 4th fill barrels. The individual components were blended prior to bottling.
TASTING NOTE
Deep colour. Dark, fleshy fruit on the nose, with marzipan and tobacco. Well structured and supported by oak influence and tannin. Fruit comes through as the wine opens up in the glass.
